Bikini Recipe
Makes enough for 10 people
To make the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Premix (yields 850ml, to serve 10)
400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Method
To prepare the Syrup: Put every items inside a saucepan, heat until it reaches a simmer, agitating until the sugar dissolves. Next, take off the heat allowing it to cool entirely. Transfer into an sterilised bottle, cap it and store in the refrigerator, where it will keep for up to a month.
For the Premix: Mix the specified liquids into one big jug, leave to sit for 60 minutes, then strain best through muslin, so it's perfectly clear.
When ready to serve: Add 85ml from the cocktail base into a mixing glass filled with ice, and stir lightly for one minute to chill. Strain into a chilled martini glass or similar, top with a few cranberries and finish with a brief mist of mandarin oil over the top.
